By now, the COVID-19 has started spreading around the world, and as a precautionary measure, PM Modi announced a nationwide lockdown of 21 days. The idea of social distancing and self-isolation may prove to be a bit overwhelming for many, but staying indoors and limiting outside interactions is possibly the best thing we can do to keep ourselves safe. If you are looking for ideas to make your time at home more fun and creative, we are here to help you. Here are some simple recipes that can be made mostly with what you have on hand.
Breakfast Recipes:
Chili cheese toast:
Ingredients
- 6 slices Sandwich Bread
- 4 tbsp Butter
- 2-3 small Red Chili or green chili, finely chopped
- 1 tsp salt
- 200 gms Cheese processed cheese grated or cheese slices.
- 2-3 cloves garlic or 1 tsp garlic powder
- 1 tsp Red Chili Flakes
- Coriander Leaves as required for garnish
- Red Chili Flakes as required for garnish
Method
- Take 4 bread slices and spread soft butter over the bread.
- Add chopped red chili and salt to the bread slices. Grate the processed cheese on top of the slices.
- Add the garlic and red chili flakes on top. Add grate some more cheese on top.
- Place the bread slices on a baking tray or a pizza screen. Preheat the oven at 200°C in broil mode for 10 minutes. And bake the chili cheese toast for 2 minutes.
- After one minute of cooking rotate the baking tray, so that everything is evenly cooked. Once done remove and allow it to cool.
- Preheat a pan and place the bread slice inside, cover the pan and cook for 3-4 minutes over low flame.
- After 3 minutes the chili cheese toast will be ready, in this type of cooking you would not get the brown color on top, but the toast will be evenly cooked.
- Sprinkle some red chili flakes on top. Slice it in half, diagonally. Sprinkle chopped coriander leaves Serve the hot Chilli Cheese Toast as a quick snack.
Masala Macaroni
Ingredients
- Macaroni – 1 1/2 CUP
- Ginger – 1 TSP (Chopped)
- Garlic – 1 TSP (Chopped)
- Green Chili – 2 (Chopped)
- Large Onions – 1 (Chopped) Tomatoes – 2 (Chopped)
- Carrots – 1 (Chopped)
- Beans – (Chopped)
- Capsicum – 1/2 (Chopped)
- Italian Seasons – 1 TSP
- Red Chili Flakes – 1 TSP
- Red Chili Sauce – 2 TBSP
- Tomato Ketchup – 1/4 CUP Mozzarella Cheese (Grated)
- Oil
- Salt
- Water
- Coriander leaves
Method
- Cook the macaroni and keep it aside.
- Heat a Kadai with some oil and add onions and green chilies.
- Add ginger-garlic paste, tomatoes, red chili powder, garam masala, salt and saute them.
- Next, add the vegetables and cook them.
- Add the sauces and the herbs and red chili flakes and pepper powder and mix them well.

Snack Recipe
Aloo Tikki
Ingredients
- Potato – 4 Nos
- Green Chili – 2 Nos Chopped
- Coriander Leaves
- Kashmiri Chili Powder – 1/2 Tsp
- Garam Masala – 1/2 Tsp
- Salt – 1 Tsp
- Juice Of 1/2 Lemon
- Rice Flour – 1 Tbsp
- Oil for shallow frying
Method
- Pressure cook the potatoes, remove the skin and place them in a bowl.
- Mash the potatoes, add green chilies, coriander leaves, red chili powder, garam masala powder, lemon juice, rice flour.
- Mix them well and make a smooth dough.
- Take a little bit of the masala and make patties.
- Place them on a plate and refrigerate them for 10 minutes.
- After 10 minutes, heat some oil for shallow frying.
- Add the patties to the oil and fry both the sides till they have a golden brown color.
- Serve the Aloo tikkis hot with mint chutney.
Chapati Sandwich
Ingredients
- Chapati
- Processed Cheese
- Ghee For Filling
- Paneer – 200 Gms
- Oil – 1 Tbsp
- Garlic Chopped – 2 Tsp
- Chopped Ginger – 2 Tsp
- Green Chili – 1 No.
- Onion – 1 No. Chopped
- Green Capsicum – 1/2 Cup
- Red Capsicum – 1/2 Cup
- Tomato – 2 Nos Chopped
- Turmeric Powder – 1/4 Tsp
- Chili Powder – 1/2 Tsp
- Cumin Powder – 1/2 tsp
- Pav Bhaji Masala – 1 Tbsp
- Salt – 1/2 Tsp
- Juice Of 1 Lemon
- Coriander Leaves
Method
- Heat some butter in a pan, add onions, garlic, ginger, green chilies, capsicum and saute it.
- Add tomatoes and all the spice powders and salt.
- Once you saute the mixture, add chopped paneer.
- Add lemon juice and turn off the stove.
- Add coriander leaves and mix it well and keep the filling aside.
- Take a chapati and place some cheese first, place the filling and add cheese on top.
- Fold the chapati and place it in a Tawa.
- Add some butter and toast the chapati sandwich.
- Serve the chapati with some mint chutney.
- For mint chutney – Grind 2 green chili, A small piece of ginger, mix of some coriander & mint leaves, extract the juice of 1 lemon and finally add some salt to taste. (add water as required)
Dinner Recipes
Egg Bhurji Paratha
Ingredients
- Oil – 4 tsp
- Chopped Garlic
- 1-Chopped Ginger
- 2-Chopped Onion
- 2-Chopped Green Chili
- Salt
- Turmeric powder – 1/4 tsp
- Chili powder – 1 tsp
- Egg – 4 no
- Chopped Coriander leaves
- Garam masala – 1/2 tsp
- Chapathi Dough
- Ghee
Method
- Take a wide saucepan and add 4 Tsp’s of oil.
- Add the chopped garlic, ginger, onions, and green chili. Sauté until the onions turn transparent.
- Season it with some salt, turmeric powder, and chili powder. Mix well.
- Pour the four eggs into the pan. Mix well.
- Add the chopped coriander leaves and mix well.
- Add the Garam masala to the mixture and give it a quick stir.
- Check for seasoning. Your egg bhurji is ready!
- Sprinkle some wheat flour on a flat surface.
- Take a little chapati dough and roll it in your palms to form small balls.
- Roll out the dough using a roti roller, making the ends thinner.
- Take a little bit of the bhurji and place it in the center.
- Seal the Paratha like how you seal momo’s and gently roll it out again.
- Tawa-fry the Egg Bhurji Paratha on both sides by drizzling some ghee on it.
- Best with:
These Egg Bhurji Paratha’s taste best when served hot right after they have been removed from the Tawa. I.e. they taste best when freshly made. Serve them with some raita, ketchup or even some pickle!
Masala Paneer Roti
Ingredients
- Wheat Flour – 1 Cup
- Green Chili – 1 No. Chopped
- Coriander Leaves
- Turmeric Powder – 1/4 Tsp
- Cumin Powder – 1/4 tsp
- Garam Masala – 1/4 Tsp
- Salt – 1/2 Tsp
- Chili Powder – 1/2 Tsp
- Kasuri Methi – 1/4 Tsp (Optional)
- Grated Paneer – 50 Gms
- Gradually Add Water
- Ghee
Method
- In a food processor, add wheat flour, grated paneer, salt, turmeric powder, chili powder, cumin powder, garam masala, coriander leaves, Kasuri methi and start kneading the dough.
- Add water gradually.
- Knead it until it forms a smooth dough.
- Divide the dough into equal-sized dough balls.
- Flatten the dough balls and roll it out.
- Roll out all the dough balls in the same way.
- Heat a Tawa.
- Place the rolled out roti onto the hot Tawa.
- Flip the roti once it is cooked on one side.
- Once the roti is cooked on both sides, add some oil/ghee on the roti.
- Serve the Masala Paneer Roti hot with pickle and curd.
